In my December Alberta Outdoorsmen column, I discuss what is involved with aging and butchering big game. Many hunters prefer to do this themselves while others prefer to take their game to a commercial butcher. The problem is that fewer and fewer professional butchers are accepting game because of the fears and new regulations associated with the Chronic Wasting Disease and E. coli scares.
I prefer to butcher my own animals because for me it completes the process of taking my food ‘from field to table’.
So, what’s wrong with that?
